One of our local grocery chains started a new program in January to promote healthy living. H.E.B. now features healthy recipes every month and a money-saving deal on the ingredients. For example, there were 4 recipes on this handout (in full color) that used ground chicken and a couple of other ingredients. If you purchased the ingredients, you saved $4. What a great way to encourage healthy eating, right?
Well, it was a good deal and the recipes sounded good, so I decided to try the Chicken Burgers.Delicious!! Even my 9-year old son ate every bite and gave them a “thumbs up”. I made them on my grill pan, but I bet they would be even tastier on the outdoor grill.
The recipe recommends freezing the patties for 10 minutes before cooking…..this is important because the chicken definitely does not hold together like a ground beef patty.
The photo does not do it justice….they are “prettier” in real life! Easy and delicious, what’s wrong with that?
I made homemade BBQ potato chips (using my awesome Pampered Chef Microwave Chip Maker) to serve with the burgers.
In case you can’t read the recipe in the photo above, here it is:
2 lbs ground chicken
1 tsp chicken fajita seasoning
1/4 cup low fat mayo
1 cup chopped spinach, fresh
1/2 can (14.5 oz) diced tomatoes, drained
100% whole wheat buns
Heat grill to 350 degrees F. Combine chicken, seasoning, mayo, spinach, and tomatoes. Shape into 8 patties. Place on a foil-lined baking sheet covered with plastic wrap and freeze for 10 minutes. Grill 5 minutes on each side or until internal temperature reaches 160 degrees F. Serve on a whole wheat bun.
Some of you may recall that I am a Weight Watchers Online member, so I calculated these burgers to be 7 Points Plus (including the bun)…not bad for dinner.
